Since lockdown (almost 3 months ago now) I’ve been baking a lot. There’s something about baking that I find very therapeutic. I’m not a methodical baker, nor a clean one; I experiment, eye ball measurements and somehow manage to use every bowl / spoon / inch of counterspace.
I was trying to come up with a recipe using haspak berry powder that Haskapa very kindly sent me. After perusing Pinterest and stalking haskapa’s Instagram, I decided to make this crumble. It’s a twist on an apple and berry crumble; gluten free, dairy free, and much lower in sugar.
Now you’re probably wondering what haskap berries are?
WHAT ARE HASKAP BERRIES? Also known as blue honeysuckle, fly honeysuckle or honeyberries, haskap berries are native to Canada, Japan, Russia and Poland. They have deep blue-purple skin and appear much like an elongated blueberry.
WHAT DO HASKAP BERRIES TASTE LIKE? They have a tart sweet taste that I can only describe as a mix between raspberries and blueberries.
WHAT ARE THE BENEFITS OF HASKAP BERRIES? These berries are very high in antioxidants, up to 3 times more than blueberries. They are particularly high in anthocyanins, which are a type of flavonoid (with antioxidant effects) that give blue, purple and red plants that rich hue. Anthocyanins are said to be beneficial for: heart health, brain health, reducing inflammation, lowering blood pressure, and type 2 diabetes.
3 small apples
¾ cup blueberries
Squeeze lemon juice
2 tsp haskap berry powder
½ tsp Ceylon cinnamon
½ cup gluten free oats
¼ cup chopped pecans / almonds
¼ cup ground almonds / walnuts
4 tbsp desiccated coconut
2 tbsp coconut oil
1 – 4 tbsp maple / honey
Preheat the oven to 180 °
Peel, core and cube the apple. Add it to the baking dish.
Add the blueberries to the dish. Squeeze some lemon juice over the fruit. Dust the berry powder and cinnamon over the fruit.
In a bowl mix the oats, nuts, coconut, oil and liquid sweetener.
Spread the crumble over fruit.
Bake for 40 mins or until the crumble is golden and the fruit is soft.
