Fluffy Banana Oat Pancakes

I regularly eat these banana pancakes for breakfast; I have them at least once a week. They’re super easy to make, make a great post workout meal, and can be frozen for a a quick and healthy snack, anytime.

Can You Make Banana Pancakes Without Egg?

For my plant based friends, these pancakes do work without the egg, but for best results I’d use a flax or chia egg.

Are Banana Oat Pancakes Healthy?

Ya bet cha! Oats are gentle on digestion and are full of fibre for healthy bowels. They’re suprising high in vitamins and minerals including B1, B5, iron, zinc, magnesium and phosphorus.

Bananas are a great source of carbohydrate (making them a good preworkout snack), fibre, potassium, vitamin B6, copper, manganese and vitamin C.

Firmer greener bananas are slightly lower in sugars (and FODMAPS), higher in resistant starch and pectin to aid digestion, where as riper yellow bananas are sighlty higher in antioxidants.

Can You Meal Prep Pancakes?

If batch cooking and meal prep is your thing, then you can absolultey make these pancakes ahead of time. Either store them in the fridge for up to 4 days, or freeze them for up to 3 months. Just pop them in the microwave to defrost/ reheat.

Ingredients

serves 2

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup milk
  • 2 big handful oats
  • 1/4 cup vanilla protein powder
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • coconut oil for cooking

Method

  • Mash the bananas in a bowl.
  • Add the eggs, oats, cinnamon, protein, and baking powder, mix.
  • Gradually add the milk, and combine with the rest of the ingredients.
  • Heat a frying pan on a medium heat with a little coconut oil.
  • Add two spoon fulls of mixture to the pan and cook until bubbles appear. Flip and cook the other side. Repeat until all the mixture is used up.
  • Top with nut butter, yogurt, dark chocolate, jam, fruit or whatever your heart desires.
