SIMPLE SUBSTITUTES

I totally get that sometimes you really want to make a recipe but find that you are missing half the ingredients. But fear not, here are some simple substitutes you can make that won’t affect the delicious doughnut outcome.

  • Strawberries → any frozen berries
  • Almond meal → DIY ground blanched almonds or ground sunflower seeds if you have a nut allergy
  • Medjool dates → raisins or currents
  • Cashew butter → macadamia or almond butter
  • Maple syrup → raw honey, date syrup, rice malt, or yacon syrup

INGREDIENTS

For the Jam

  • ½ cup frozen strawberries
  • 2 heaped tsp chia seeds
  • Pinch Ceylon cinnamon
  • 1 tsp vegan collagen powder

For the Doughnut Balls

  • ½ cup almond meal
  • ½ cup desiccated coconut (+ few tbsp extra for coating)
  • 6 medjool dates
  • 2 heaped tbsp cashew butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch salt
  • ¼ tsp of vegan collagen powder (for coating)
