Most unusual fruit you’ve eaten? 🥭🍓🍑🥝🍍🍈🍌🍊

For me it was a pomelo. It looks like a giant white grapefruit & from memory it was quite pithy & sour. It was a pomel-no from me. 😂

But I think it’s always a good idea to throw a wild card food item into your shopping trolley 🛒 to help keep your diet fresh & interesting 🍍🌶🥥🥝. This week it was physalis (cannot for the life of me spell it, *Googles physlis…pyhsilias…physilas*).

Who’s excited for pancakes tomorrow? 🙋🏻‍♀️🥞

My favourite pancakes:
🥞 Banana (1 🍌+2🥚)
🥞Crepes (on special occasions I’ll make them with chestnut flour)
🥞 Oaty (1/2 a 🍌, 1 🥚, splash almond milk, handful of oats, 2 heaped tbsp protein powder, 1 - 2 tbsp coconut flour, 1/2 tsp baking powder)

The BEST pancake toppers:
🍫 Chocolate: squares to melt on top, or homemade sauce. I opt for dark as it’s lower in sugar & higher in antioxidants.
🌰 Nut butter: peanut, almond, cashew, chocolate hazelnut. Tip: Look for minimal ingredients & ingredients that you understand.
🥥 Yogurt: I’m a big fan of unsweetened coconut yogurt. Tip: check the ingredients & look for added probiotics/ live cultures.
🍓 Fruit: berries, kiwi, pineapple, physalis…whatever takes your fancy. Tip: add a pinch of cinnamon to help balance blood sugar levels.

I would suggest a sticky sweet glazed chocolate hazelnut babka but this cake took me 5 hours to make (sooo much proofing). For a simpler dessert I think brownies or mug cake are a winner 🧁🍰💕
