The weather here in the UK has been hot, as in above 30C hot which is very rare. Whenever it’s hot I crave tropical smoothie bowls, homemade ice lollies, salads and basically all the fruit. So naturally when I went to have my usual lunch of avocado on sweet potato toast (recipe in my eBook), I found myself reaching for something different. Something light and fruity.
I checked the fruit bowl and there starring back at me, begging to be used, was a juicy mango. Now I know the combination of avocado and mango sounds weird but trust me, it works. It tastes like combining mango salsa with creamy avocado, and reminds me of a holiday to Tulum where I ate salsa and chips on the beach. In other words, this mango avocado dip is a Mexican party in your mouth.
5 REASONS I LOVE AVOCADOS
They are nutrition dense, packed full of vitamins and mineral (like 20+ of them) including vitamin C, K, B5, B6, E, folate and potassium.
They’re a source of healthy fat, specifically monounsaturated fat which is associated with a decreased risk of heart disease. Healthy fats are also essential for supporting hormone health. Avocados contain beta-sitosterol which can help reduce the stress hormone cortisol.
Avocados are a very anti-inflammatory food, largely due to their high content of monounsaturated fat and anti-oxidants.
Like most fruit and vegetables avocados contain fibre. Fibre is essential for bowel health and may even help prevent colon cancer. However, if you have IBS or are on an elimination diet it is important to note that more than 1/8 of an avocado is considered high FODMAP. This is because avocados contain polyols (the P in FODMAP).
You don’t just have to spread them on toast, avocado is extremely versatile; spread it, mash it, blend it up into a sauce / dip, add it to your smoothie, or bake it with eggs.
Juice of ½ a lemon
2 spring onions
1 large garlic clove
1 tsp dried coriander or 1 tbsp fresh
Pinch Himalayan salt
Pinch black pepper
Blend everything together until smooth.
Taste & adjust as needed.
