FRUIT ‘N NUT ROCKY ROAD

This is rocky road, reinvented. Still chunky, chocolatey, crunchy and chewy, but free of the refined, processed and artificial ingredients that can irritate your gut, flare up IBS symptoms and contribute to inflammation in your body.

In fact, this rocky road makes an ideal little treat or tasty mid morning / afternoon snack. It’s packed with protein and healthy fats to keep you full as well as anti-oxidants to fight ageing free radicals and keep your skin youthful.

One of the best ingredients in this fruit ‘n nut rocky road has to be the hemp seeds. If you don’t eat hemp, you should!

* Hemp is gentle on digestion and is low fodmap so it’s a great option if you have IBS
* Hemps seeds are high in both soluble and insoluble fibre
* They contain essential fatty acids, linoleic acid (omega-6) and alpha-linolenic acid (omega-3), which play an important role in anti-ageing (think plump, glowing skin)
* Hemp is rich in protein and contains a good range of amino acids making it a great addition to vegetarian and vegan diets
* They contain a range of vitamins and minerals including anti-oxidant vitamin E, immune regulating zinc and magnesium which is involved in hundreds of biochemical reactions in your body from energy yielding to deep sleep.

 

WARNING  you may want to hide this rocky road away from your family and friends because trust me, it won’t last long! Especially as it’s:

✔ Vegan
✔ Gluten free
✔ Dairy free
✔ Soy free
✔ Refined sugar free

…although, you wouldn’t know it.

P.s feel free to switch up the fruit & nuts, I reckon macadamias, brazil nuts and goji berries would work great too!

INGREDIENTS

2 x 70g bars raw / dark chocolate
(I used a mix of Ombar mylk & Raw Halo salted dark
1/3 cup almonds
2 tbsp chopped roasted hazelnuts
¼ cup dried cherries*
(I used Urban Fruit)
¼ cup dried cranberries *
2 tbsp shelled hemp seeds
Pinch ceylon cinnamon

 

NOTES
*try to find 100% pure dried fruit. If you can’t, get ones infused with fruit juices. DO NOT opt for ones infused with sugar or coated in preservatives (these are inflammatory & can irritate your gut).

METHOD

  1. Preheat oven to 180°C. Line a baking tray and roast the almonds for 7 – 10 mins.
  2. Allow to cool, then roughly chop.
  3. Create a bain marie (bowl over a pan of boiling water). One the water is boiling, reduce the heat right down.
  4. Break up the chocolate (resisting the urge to eat it all) and add to the bowl. Gently stir and allow to fully melt.
  5. Add all the rest of the ingredients to the bowl and thoroughly coat in the chocolate.
  6. Transfer to a freezeable dish / tub. Spread until you have an even(ish) layer.
  7. Place in freezer to set for approx 2 hours.
  8. Once set, either slice the rocky road with a knife or break it up with your hands.
  9. Store in the fridge & consume within a week.
