Fruit ‘n Nut Healthy Rocky Road

This is rocky road, reinvented. Still chunky, chocolatey, crunchy and chewy, but free of the refined, processed and artificial ingredients that can irritate your gut, flare up IBS symptoms and contribute to inflammation in your body. Chocoholics, you’re going to love this healthy rocky road! I make it every Easter, Christmas and birthday for my family.

What Makes This Rocky Road Better?

Traditional rocky road is made with lots of high sugar foods like marshmallows, and biscuits, and is then mixed with syrup and covered in chocolate. This rocky road is made with whole foods and is a source of healthy fats, protein, and anti-oxidants. Some of the hero ingredients:

  • Cacao/ dark (70%+ chocolate): packed with anti-oxidants and a source of magnesium, calcium, copper, and iron.
  • Hemp seeds: high in protein and contains a good range of amino acids making it a great addition to vegetarian and vegan diet. Hemps also contains essential fatty acids called linoleic acid (omega-6) and alpha-linolenic acid (omega-3), which play an important role in anti-ageing (think plump, glowing skin)
  • Almonds: high in healthy fats and rich in skin nourishing vitamin E
  • Dried fruit: a great source of fibre to support digestive health. (Try to pick dried fruit free of sulphites and added sugars)
  • Ceylon cinnamon: full of anti-oxidants and great for helping to balance blood sugar levels.

How Long Does Homemade Rocky Road Last?

Due to the wholesome ingredients in this healthier rocky road, it is best stored in the fridge and eaten within 10 days. Although, it’s usually eaten with 3.

INGREDIENTS

2 x 70g bars raw / dark chocolate
(I used a mix of Ombar mylk Raw Halo salted dark
1/3 cup almonds
2 tbsp chopped roasted hazelnuts
¼ cup dried cherries*
(I used Urban Fruit)
¼ cup dried cranberries *
2 tbsp shelled hemp seeds
Pinch ceylon cinnamon

METHOD

  1. Preheat oven to 180°C. Line a baking tray and roast the almonds for 7 – 10 mins.
  2. Allow to cool, then roughly chop.
  3. Create a bain marie (bowl over a pan of boiling water). One the water is boiling, reduce the heat right down.
  4. Break up the chocolate (resisting the urge to eat it all) and add to the bowl. Gently stir and allow to fully melt.
  5. Add all the rest of the ingredients to the bowl and thoroughly coat in the chocolate.
  6. Transfer to a freezeable dish / tub. Spread until you have an even(ish) layer.
  7. Place in freezer to set for approx 2 hours.
  8. Once set, either slice the rocky road with a knife or break it up with your hands.
  9. Store in the fridge & consume within a week.
